Peanut butter making my heart flutter!!! ha ha these cupcakes were so good I already had about 6 of them before the second batch came out of the oven.
For this one you will need; 2 cups of dark brown sugar, 1/2 cup of butter, 1 cup of smooth peanut butter, 2 eggs, 1 1/2 cups of milk, 1 teaspoon of vanilla extract, 2 1/2 of plain flour, 1 teaspoon of baking soda, a pinch of salt and 1 1/2 teaspoons of lemon juice.
First of all, preheat the oven to 175 degrees celsuis, line a cupcake pan with paper liners, then in a large bowl mix the brown sugar, butter and peanut butter, using an electronic mixer. Beat in the eggs one at a time and then stir in the vanilla. Mix the flour, lemon juice, baking soda and salt and stir into the batter alternately with the milk. This means you pour a bit of the flour mixture, beat, then a bit of milk and beat until it’s all combined together.
Spoon the mixture into the cupcake liners, and bake for 20 minutes, but the next batch could go for 15 minutes because the oven is going to be hot and you don’t want your second batch all burnt. Remember to let it cool before transferring them to your wire rack…Enjoy!!!
